I think that every food lover has this constant craving, not knowing exactly for what, but for something special, for sure :) Last week I kept thinking what to cook for the weekend and it came to me in the car while passing by a KFC restaurant - what not try a similar recipe?
The result was beyond expectations, I completely forgot about the KFC chicken legs, I've found the perfect alternative, very similar and relatively healthy. Flavourful, juicy and crispy - we just couldn't wait for lunch the next day to eat again. And I had the impression that we ran out too quickly (even though I used 2 kilos chicken legs). You can as well use chicken thighs or breast to cook this recipe.
Wash the chicken legs thoroughly. Season with salt and pepper and use your hands to spread the spices on all sides (you can also use other dried herbs).
Pour the oil little by little into the mustard and mix to incorporate.
Add in crushed garlic and onion - I used the garlic crusher for both - a blender will do too. Mix well.
Tip onto a plate some flour, paprika, coconut flakes and potato chips.
Coat each chicken leg drumstick with the mustard mixture.
Then roll each one in the dry mixture and place them on a baking sheet pan, greased with oil or lined with parchment paper. Bake in the oven to 200-250 degrees C.
After half an hour they will be golden brown on the bottom side, remove the baking sheet pan from the oven, turn the chicken leg drumsticks on the other side and bake for another half an hour.
Serve them hot together with a sauce - I made garlic sauce (yogurt, mayonnaise, garlic and salt) - and a salad or any side dish you like.
