I've noticed that these Polish origin Mazurkas, traditionally prepared at Easter, have become a trend on Youtube lately. So, I decided I'd try it myself. Especially since we were running out of ideas of something good, quick, simple and delicious to go along with the morning coffee and without having to get out of the house for this.
So, yesterday I gave it a go and they were so good that today I wanted you to have the recipe as well - to enjoy them together. Besides the fact that there is no oil or butter whatsoever in the mixture, you don't even need to have any special skills to shape the cookies - you only need to cut them. I intend to cook Mazurkas again very soon and this time it'll be with pumpkin or sunflower seeds and all the dried fruit I will be able to find in the house.
First prepare the ingredients - notice that I'm using the same 250ml glass/cup to measure flour, sugar, nuts and dried fruits.
On a plate, mix flour, baking soda and a pinch of salt.
In a bigger bowl, beat eggs with sugar until a white foam forms.
Incorporate the flour mixture and slowly mix with a whisk or a spoon until you get rid of all the lumps.
Add in the chopped nuts and the dried fruit and stir.
Transfer to a baking sheet, base lined with parchment paper.
Then carefully, using the handle of the spoon, spread the mixture evenly, about 1 cm thick.
Notice that it doesn't have to cover the whole surface of the baking sheet from one edge to the other, you only want it to be 1cm thick so, once you have it, stop spreading the mixture. It won't lose its shape while baking.
Bake in the preheated oven to 180 degrees C for 15-20 minutes.
As soon as it's ready and you remove it from the oven, immediately start to cut it in rectangles or triangles, or any other shape you like. You want to be quick, because once it cools, it gets harder to cut.
