I will show here my favourite chocolate loaf cake - super delicious, soft and chocolatey, with strong flavour and small pieces of melted chocolate in it - I think it's one of the simplest and tastiest loaf cakes I've ever made.
The recipe is easy (you don't need a mixer) and you can use the same batter to make chocolate muffins, kids will love them. In the video you will see the detailed process and the steps with pictures will guide you through. So I strongly recommend trying it, you will enjoy this chocolate loaf cake to the last bit.
Melt butter in a saucepan, then let cool.
Chop chocolate into small pieces.
Mix all dried ingredients into a bowl - flour, sugar, cocoa powder, baking powder and baking soda.
Add chopped chocolate to the dried mixture.
Then whisk the liquid ingredients in a bowl - milk, butter, eggs and vanilla extract.
Pour the liquid mixture over the dried ingredients, whisk well.
This is what the batter looks like in the end.
Tip the batter into a loaf pan (here, 24x10cm). If it's not a silicone loaf pan, line it with parchment paper before.
Bake in the preheated oven to 200 degrees C for 40-45 minutes until a skewer inserted in the centre comes out clean.
Remove from the oven and cool in the pan for 1 hour, then lift out onto a plate and let for another 1-2 hours.
Here are some muffins, as delicious as the loaf cake.
When cool, slice the loaf cake and taste - it's a fantastic feeling how the pieces of melted chocolate combine with the spongy and soft texture.
