If you are looking for a good buttermlik pancakes recipe you are in the right place - these pancakes are delicious, fluffy and tender, but very easy to make! You can add some fresh fruits in the batter, personalize your pancakes recipe, we love them simple with some strawberry jam, maple syrup or honey.
In a bowl beat the eggs and 250ml of buttermilk, add the sugar and melted butter, mix well.
Add vanilla and mix again.
In a separate bowl combine the flour, baking soda, baking powder and salt.
Pour the wet mixture into the dry mixture, using a spoon stir until is just blended toghether.
Do not over stir! The batter should have small to medium lumps.
Let it rest for 20 minutes.
After that time gently stir again. You'll see that lumps go away and the batter is perfect.
Heat well a heavy-bottomed pan, optionaly you could grease it with some vegetable oi.
Use a folded piece of paper to absorb the excess of oil.
Pour the batter onto the pan using a big spoon or approximately 1/2 cup for each pancake.
Let cook undisturbed over medium heat, until bubbles form holes that stay open on the surface of the pancake.
Place a spatula underneath the pancake and flip it.
Cook the secon side for 1-2 minutes more.
Transfer the pancake on the plate while you repeat with the remainig butter.
Serve hot with butter, jam, maple syrup or honey.
