These bagels were delicious, with a milk and butter taste, soft texture and slightly crispy on top .... a true delight! You can sprinkle them with sesame seeds, poppy seeds or salt flakes and they will go perfectly with your favorite beverage.
Heat the milk until it's boiling.
Add the sugar and butter, stirring until melted. Then let it 10-15 minutes to cool down.
Add the yeast and stir, leave aside until the milk makes foam.
Separate egg yolks and whites.
Whisk egg whites with a pinch of salt until they foam.
Add the egg whites and the yeast mixture to the flour.
Knead the batter with a wooden spoon, until it turns to a sticky dough.
Sprinkle some flour on the table and continue kneading the batter. On the table this process will be easy and fast.
Knead the dough until you obtain a uniform composition.
Put it in a bowl, cover with foil and let it rise.
When it doubles its volume,it is ready.
Split the dough into 12 small pieces. Roll each piece into a ball and set it aside.
Put your thumb through the center of each roll and then rotate the dough.
Try to make the hole as wide as possible as they will further grow when baked.
Let the dough rise for about 20 minutes.
Heat a large pot of water until boiling. Drop sme of the bagels into the pot, one at a time and let them boil for 20-30 seconds. Then remove the bagles from the pot with a spoon and place them in an oven tray, which was previously covered with baking paper.
Brush the bagles with beaten egg yolk and sprinkle sesame seeds(or any seeds that you like) and bake them in the preheated oven at 200 C until nicely browned.
Remove the pan from the oven and let the bagels cool on a gril.
