Step 1
Peel and wash the carrots thoroughly, then grate them using a medium-hole grater.
Step 2
Grate the yellow cheese using the same grater.
In a bowl, combine the grated cheese, mayonnaise (or a mix of mayo and 1-2 tablespoons of Greek yogurt), crushed garlic, salt, and ground black pepper.
Step 3
Stir the ingredients well to combine. Taste and adjust with more mayonnaise, salt, or pepper as needed.
Cover the bowl with plastic wrap or a lid and refrigerate for 1-2 hours to let the flavors blend.
Step 4
Serve chilled, either on its own with fresh bread or as a side to grilled meats or barbecue.
