Today I want to show you another one of our favorite and interesting combinations for homemade pizza. We really liked this pizza with chicken and pesto sauce. It's special and I warmly recommend it.
You can make the pesto sauce beforehand (it keeps well in the freezer), as well as the roasted chicken breast. I always keep a few pieces in the freezer specifically for this pizza or other quick meals with cooked chicken.
Prepare the green pesto sauce or Pesto Genovese - my recipe is here.
You can prepare it fresh the day before, or keep in the freezer if you make it in advance.
Thinly slice the chicken breast and sprinkle with salt and pepper. You can cook it on the grill, bake in the oven, in a pan, or even use chicken schnitzels.
It can also be prepared beforehand and kept cold or in the freezer.
Prepare the pizza dough. Use any recipe you want. You can find my simplest version of Pizza Dough here.
When the dough has rested and risen, shape into a round pizza.
Spread with two spoons of pesto sauce.
Sprinkle the top with grated cheese for pizza or mozzarella.
Arrange the cooked chicken, thinly sliced, on top.
Bake the pizza in the preheated oven to 200 degrees C (or in a wood-fired oven, if you have one and you like the process), until it browns evenly.
It's delicious and definitely worth trying.
Enjoy!
