Step by step
Step 1
Place three eggs, 75g of sugar, one teaspoon of vanilla essence and the grated peel of a lemon in a bowl.
Step 2
Beat well with the mixer until white, foamy and bigger in volume.
Step 3
Add 50g of softened butter, mix again.
Step 4
Add 150g of flour and one teaspoon of baking powder. Whisk well until the batter is no longer lumpy.
Step 5
Line a pan of about 26cm in diameter with parchment. Pour the batter and smooth out with a spoon.
Step 6
Peel and core the washed pears. Cut into long slices and arrange on top of the batter.
You must press them a bit to sink into the batter.
Step 7
That's what my cake looks like. You can put more or less fruit, as you like.
Step 8
Bake the cake in the oven preheated to 200 degrees C for 25-30 minutes, or until it browns evenly.
Allow to cool for at least one hour in the pan before serving.
Step 9
Sprinkle with powdered sugar on top. As pears are not very sweet, this brings an extra taste.
Serve and savour. On the second day, it was even more tender, so don't rush to finish it, if you can :)
