This peach bread is wonderful, very colorful, aromatic and delicious. Its texture is perfect and all the ingredients are at hand. With 3 peaches you'll be able to make a fantastic summer dessert that the whole family will appreciate.
These quantities are for my loaf pan, which is a bit bigger (35cm long). If yours is shorter, adjust the quantities accordingly.
In a deep plate, combine 400 g of flour with 10 g of baking powder and 1/4 teaspoon of salt.
Wash the peaches, remove the pits and cut into medium-sized cubes.
In a larger bowl, combine 4 eggs, 220 g of sugar, vanilla essence and grated lemon zest.
Beat very well with the mixer until it turns into a whitish foam.
Pour the 150 ml of oil or melted butter, a little at a time. Whisk constantly until it's completely incorporated into the mixture.
Add 250 ml of milk, stir with a whisk. At this stage, if you use the mixer, it's very likely that the batter will splash because it's more liquid now.
Add to this batter the flour mixture we prepared in the first steps.
Stir everything with a whisk until smooth and lump free.
Add the 3 diced peaches, toss.
Pour the entire mixture into a loaf pan lined with baking paper. Mine is 35 cm long, 11 cm wide and 7 cm high.
If you have a smaller pan, adjust the quantities of the ingredients accordingly.
Bake the cake in the preheated oven at 180 degrees C for 50 minutes or until the toothpick comes out clean.
After baking, leave in the pan for another half hour to cool down a little.
Then take out of the pan and let cool completely.
It's delicious, either hot or cold. We ate it with the whole family.
