Step by step
Step 1
In a bowl, combine 200g of flour with 2 tablespoons of sugar (optional), 2 teaspoons of baking powder and a pinch of salt.
Step 2
Mash the (peeled) bananas with a fork on a plate.
Step 3
In another bowl, combine the wet ingredients - 2 eggs, 220ml milk, 60ml oil and the banana puree from the previous step.
Step 4
Add the flour mixture from step 1 to the bowl with the wet ingredients.
Step 5
Whisk, but don't insist too much, a bit lumpy is OK.
Leave on the table for 10 minutes.
Step 6
After 10 minutes, mix the batter properly once more and start frying the pancakes.
Step 7
Heat well a frying pan. I always oil the pan for the first pancake, but I make sure to wipe off the excess with a napkin.
Step 8
Pour about 1/3 ladle of batter into the pan.
Or 1 tablespoon, if used instead of ladle.
Let the batter spread by itself, then shape into a circle, using the ladle or the spoon.
Step 9
Cook the pancakes over low heat, otherwise you risk burning them too quickly.
Wait until many air bubbles form on top.
Step 10
Then quickly flip with the spatula and leave for another 2 minutes.
Step 11
Transfer the fried pancake to a plate and continue with the next one until you finish all the batter.
From this batter, I made about 20 pancakes.
Step 12
Serve these banana pancakes hot, just like like any other pancakes - with honey, jam, maple syrup, yogurt, chocolate cream etc.
