I didn't think I would get so much praise for a vegan recipe. In fact, I was waiting for the family reaction with a bit of hesitation. But it seems like we have a new favorite recipe - burrito with vegetables, a Mexican recipe made with what I had at hand.
The whole process is simple and fast, you just need to be a bit careful when shaping the burrito rolls. I recommend serving them immediately after frying. Don't make too many beforehand - the tortillas will soften and lose their crunchiness.
You can change the vegetables in the mixture as you like. I was guided by color and children's preferences. The same with the sauce used for seasoning the vegetables and the tortillas, you can modify as you like. For extra nutrients, I spread the tortillas with vegetable bean paste and vegetable lentil paste.
Wash well all vegetables. Cut the red cabbage and the bell pepper into thin slices.
Dry the lettuce and spinach leaves with a paper towel.
You can slice the avocado and use it as such in the burrito. I preferred to mash it with a fork and turn into a kind of vegan sauce. I added the juice from half a lemon, salt and a little ground pepper to taste, I mixed well.
Spread each tortilla with lentil paste. I also combined it with bean paste.
On one side, place the lettuce leaf, a few slices of pepper.
Then, the sliced red cabbage. Spread over 1 tablespoon of avocado sauce, the one prepared above.
At the end, add 2-3 tablespoons of canned corn.
Try not to overload the tortillas. It will be difficult to roll up and they may break.
Start rolling the burrito up - fold the bottom side over the vegetables.
Tuck the lateral sides inwards.
Then keep rolling the burrito up.
Shape the other 3 burritos in the same way - I made one for each family member.
Heat the pan well and grease with a little oil.
Place burritos in the pan, first time, seam side down.
Cook over medium heat. Be careful, they will cook very fast, literally, in a few seconds, so don't go far.
Brown the burritos on all sides like this.
Once browned, cut the burrito rolls into halves.
Serve right away while hot - plain or with salsa sauce, with vegan or plain yogurt or any other sauce you like.
I like them with yogurt, it's a wonderful and cooling combination of sourness and crunchiness.
