Today I'm coming with yet another new and interesting recipe in which I want to show you how to prepare a delicious and special low-fat, low-sugar homemade cake, with care for the digestive system of your family.
I made so many healthy desserts, but this almond and prune cake made me say "Wow!" when I first tasted it. It has a subtle aroma of almonds, vanilla and plums, it's tender, fluffy, soft, therefore perfect and healthy!
Notice that we only have 3 tablespoons of sugar and 5 tablespoons of oatmeal (which you can replace with a different one - wheat, wholemeal, buckwheat, rice, rye etc.). I would also mention that I did not expect such a light cake to have such a complete and special taste.
Finely grind 100g of raw almonds using a blender or food processor.
Mix this almond flour with 10g of baking powder, a teaspoon of salt and 5 tablespoons of oatmeal (I ground the oats in the same blender).
Again, place in the blender 150g of pitted prunes and 1 egg.
Blend until the plums are well crushed, see the texture in the picture.
In a bowl, whisk 3 eggs with 3 tablespoons of sugar and 1 teaspoon of vanilla essence.
Add in here the crushed plum mixture and mix again.
Add the flour mixture from step 2, beat well with the whisk until it's no longer lumpy.
Notice here that the final batter should be runny, but slightly thicker, like yogurt or sour cream.
Transfer to a baking sheet lined with parchment. I used a 26cm diameter sheet.
Chop the remaining 50g of almonds with a knife.
Spread over the batter evenly.
In the same way, cut 50g of prunes into small pieces and sprinkle over the top.
Bake the cake in the preheated oven at 200 degrees C for 25-30 minutes.
Let cool for at least 30 minutes after baking, then you can already slice, taste and savor.
