Easy Mint Cookies
We are big fans of mint, but our imagination didn't help us much, so until now we only used mint in tea, lemonade, decorations and, occasionally, in some dishes. But these days things lined up in such a way that it just happened to have a bag of fresh mint in the fridge and to see on Youtube the idea of these beautiful and easy to prepare mint cookies.
Because the process was very fast, I didn't hesitate to try and I discovered a very special recipe to save - so these mint biscuits are beautiful, with a soft and tender texture and the aroma of mint with butter is absolutely fantastic.
If you don't like mint candies, you might not like the cookies either. Even in our family they were 75% successful - my little Maria said she didn't like them because they tasted like mint candies. On the other hand, we were very excited. I will definitely repeat the recipe on another occasion, and of course in other flavor combinations!
Ingredients

Fresh mint leaves
20 g
I had 3-4 sprigs of mint, I used only the leaves, without the stems

Butter
100 g
softened, at room temperature

Step by step
Step 1
In a deep bowl, combine the mint leaves and 100g of sugar.
Step 2
Whisk well with the hand blender until you get a mint paste as smooth as possible.
Step 3
Add in 100g of soft butter and 1 egg, blend well until the mixture is smooth again.
Step 4
At the end, add 200g of flour and 1 teaspoon of baking powder.
Step 5
Mix the batter well with a spatula or spoon until it becomes uniform and a little thicker yet still a bit sticky.
Step 6
Grease your hands with a little oil, take 1 tablespoon of batter in your palm.
Step 7
First shape into a ball, then press to form flat and round biscuits.
Step 8
Shape about 14-15 biscuits and arrange them on a sheet lined with baking paper.
Step 9
Bake in the preheated oven at 180 degrees C for 15 minutes.
Notice that the top doesn't brown too much, while the base browns just enough.
Allow to cool slightly, then serve with great pleasure.
