I was telling you that I haven't bought puff pastry from the store for a long time since I discovered the quick homemade puff pastry recipe. I like to make it in advance and keep 1-2 servings in the freezer. When I'm in a hurry and I need some special but also simple appetizers, I quickly make these homemade puff pastry cheese bites, or the ones with minced meat as in the recipe here.
Most of the time I prefer pastries with cheese because they are the easiest to prepare, the most loved by children, they do not contain eggs, and, if you go on a picnic, they do not necessarily have to be kept in the fridge. They are just as good hot or cold, you can add some green onions or dill, if you prefer, or change with another filling that you like and will not run during baking - cabbage, potatoes, minced meat, sauteed mushrooms, and so on.
They are great for a school or work lunch, appetizers, road snacks etc. Of course, you can replace the homemade pastry with the store bought one, but I don't recommend it...
