As I was telling you in the previous article about Honey and Mustard Dressing, leaf salads in the cold season are basic for us. I buy various combinations, but I always have a bag of Baby Spinach in the fridge - it seems to me that it has a neutral taste, it goes well with anything and the children like it the most. The other day I tried this recipe with apples, nuts and cranberries - it was a super hit, my mouth is watering even now when I think of it... It will definitely be repeated many times, it's really simple, interesting and very tasty. You don't have to boil or cook anything in advance and if you don't have cranberries, you can easily replace them with some raisins.
Of course, the honey dressing does half the job but, even if you don't have whole grain mustard, it's still worth trying the salad! In the vegetarian version you can use tofu cheese, or omit, it's good anyway.
On a large plate, place about 2-3 handfuls of washed and dried spinach, maybe using a salad spinner for this (mine was bagged spinach, so already washed).
Cut the apple into thin slices and place on top of the leaves.
Add the cranberries and walnuts.
Crush the cheese with your hands and sprinkle over the rest of the ingredients.
Prepare the honey and mustard dressing, you can make it in advance and shake it well before use.
If you don't have mustard, make the sauce without it.
Pour about 3-4 tablespoons of sauce over all the ingredients in the salad.
And serve immediately with great appetite, because it's really good...
