How to Freeze Whole Strawberries
This time we are talking about strawberries frozen whole and below I will give you some useful tips that will change a lot your work in the kitchen, especially in terms of healthy and tasty desserts! For many years, after several tests with whole strawberries in the freezer, I gave up the idea - thawed strawberries get flabby, don't hold their texture, nor the intense color etc. But what if we had "partially thawed strawberries"? I use them in desserts or as a cake decoration 15-30 minutes before serving. They thaw easily, yet they still have texture, flavor and color. I successfully tested this method last year on blackberries and raspberries. This year I will freeze strawberries in the same way. They are wonderful as a final decoration on any tart or cake - I just take them straight from the freezer bags, and put them all half an hour before serving the dessert. Children appreciate them a lot, and not only children...
On the other hand, you can use them straight from the freezer all year round to make the simplest and most delicious Strawberry Ice Cream, Sugar-free jam, compote or any dessert with strawberry puree. But for this, I recommend the other method of freezing strawberries, as a puree or cut into pieces.

Step by step
Step 1
Wash well and hull the strawberries, don't keep them too long in the water so that they don't get saggy.
Place in a colander to drain well.
Step 2
Then I sort them like this:
- I put the medium, small and whole strawberries on a kitchen towel (it absorbs the excess water) - they will go into the freezer
- the soft or the large ones, on a plate to eat immediately, fresh or in desserts
- some for jam, syrup etc. - if you make.
Step 3
I then move the strawberries from the towel to a tray. I recommend lining the tray with cling or a plastic bag, so the strawberries won't get stuck to it after freezing.
Step 4
Place the tray in the freezer for at least 2 hours or more.
Step 5
After this time, move the strawberries in an airtight freezer bag, a practical way to store them.
Step 6
I usually have a big bag, from which I take strawberries for desserts whenever and however much I need. I seal the bag again and put it back in the freezer.
But I also make small bags, with portions dedicated only to sugar-free jam or strawberry ice cream.
