This pie with cheese and greens is an improvisation. In fact, it's more like of a pudding with salted cheese. Call it as you wish, it's still very good, especially when you want to avoid any type of flour as much as possible, yet enjoy the taste as close as possible of that of a traditional cheese pie.
In a deep bowl, place the cottage cheese. Notice its consistency in the picture.
Crush the Telemea/Feta cheese into large crumbs or bits.
Add 3 eggs and finely chopped greens, stir the mixture well with a spoon.
Line a round pan (diameter 28cm) with baking paper. Pour in the cheese mixture and even out with a spoon.
I cut the paper according to the method here letting the borders come up the sides of the pan. This is because I don't want to dirty the sides, it's very difficult afterwards to wash the egg and the cheese stuck on them :)
In a small bowl, beat 1 egg and 1 tablespoon of sour cream using a fork.
Pour this mixture over the pie and smooth out carefully with a spoon.
Place the pan in the preheated oven at 180 C for 40-45 minutes, approximately.
When browned, remove from the oven. Notice it's still swelling for a while, but then it sinks very quickly. It's normal.
That's what it looks like in the end.
If you want a slightly higher pie, use a smaller pan. I prefer it thin, when it's thick it seems to look more like a pudding.
When cooled completely, it'll be easy to slice.
Cold, from the fridge, is very good as well.
I recommend trying it, especially for the greedy ones who are, at the same time, careful about their figure, gluten and carbohydrates. It's delicious and with no remorse later :)
