Now it's the wonderful season full of vegetables which are tasty, colorful, diverse. So we can find countless combinations of healthy and tasty side dishes. After our visit to Greece this summer, I used too much of this mix of tomatoes / peppers with feta, yellow cheese and olive oil. Not that it was a great discovery, but I liked it and I think it's the simplest and most delicious combination. You have also seen my version of Bouyourdi. The tomatoes and peppers there are cooked au gratin, but here I propose a simpler thing - some slices of peppers quickly baked in the oven with feta and yellow cheese.
These baked peppers with cheese are a simple and great find for the busy homemakers who want to spoil their family with good home-cooked food. All the ingredients are assembled raw, during which time we heat the oven, bake for another 15 minutes and here is the colorful and wonderful garnish!
Before you start the recipe, in order for you to work quickly and finish the meal in 30-40 minutes - turn the oven to 200C first.
Sprinkle a larger oven sheet with a little olive oil.
Wash the peppers, cut them in halves and remove the stalk and the seeds.
Arrange the halves in the sheet greased with oil.
Season each pepper with oregano and other spices you prefer.
Add a little salt, but be careful if the cheese is salty.
In addition, you can spread over with some crushed garlic, but this is up to you - I only do this if I have time.
Sprinkle with some oil on each slice of pepper.
Crush the telemea cheese (Romanian cheese) with your fingers and scoop about 1 tablespoon on each slice of pepper.
And for a creamier crust, spread the top with grated yellow cheese.
Normally, you can also skip the yellow cheese, but I like to add at least a few strands for extra taste and texture.
And it's ready. Now place in the preheated oven for 15 minutes. You don't have to bake for too long, just enough for the cheeses to melt. The peppers will soften but won't dry off.
You can serve as a hot appetizer, side dish or as a vegan meal.
