It really is fantastic - simple, fast, very delicious and it doesn't require frying. I put less oil than it is suggested in many other recipes of this type and it was still very good. I know the Romanian fish stew recipe from my grandmother, it's got history and I have feelings for it. But if I had to choose, I'd prefer this fish baked in the oven. It's easier to cook than my grandma's recipe, but in taste I'd say the two are very close.
Most of the time, I prefer my quick recipe for baked fish with vegetables when I want a healthy and fast fish meal. Now I have another favorite recipe and I highly recommend it!
Of course, the first step is preparing the fish: clean, wash, dry and cut as you prefer.
Sprinkle with 1 teaspoon of salt and ground black pepper on top - rub the fish well with your hands to cover evenly with the spices.
Prepare the rest of the ingredients for the recipe.
Cut the pepper, onions and garlic into medium pieces and place in a deep oven dish.
Pour over the oil.
Add salt, a little pepper, paprika and other spices you prefer.
Mix well and place in the preheated oven at 200 degrees C for 15 minutes.
You will already notice here the beautiful smell and colors, the recipe works well :)
Pour the canned or fresh diced tomatoes and white wine over the cooked vegetables, mix well.
Put the fish pieces in the vegetable sauce.
Spoon some tomato sauce on top of the fish pieces too.
Put the tray back in the oven for another 30-40 minutes.
Serve the fish hot with polenta, potatoes or fresh bread, it's very good.
