The simplest, the most delicious and fragrant walnut cookies can also be vegan and can be adapted for any taste and preference. Vegan or Lenten cookies can definitely turn into butter cookies, if you use it instead of oil and use milk instead of water. The buttery ones might be a bit more tender and fragrant and, sometimes, it might be a challenge making things simpler. Besides, oatmeal can be mixed with flour and some of the flour can be replaced with wholemeal. If you want the biscuits even more interesting, you can put coconut butter instead of oil. But these are variations. Below you can find the simple recipe for walnut and cinnamon cookies, a classic combination which cannot go wrong.
I improvised this recipe starting from the poppy seed lemon cookies recipe. I congratulate myself for what I managed to create below because I was able to intuit all the changes. The biscuits turned out very good, maybe not as perfectly tender as the ones with butter, but too good for some ordinary vegan ones.

In a bowl, combine flour, ground walnuts, sugar and cinnamon.
You can also make some oatmeal cookies if you replace about 50g of flour with finer oatmeal.
Add salt, vanilla, baking powder and mix well all the dry components.
Pour the oil and the water.
To make butter cookies, replace the oil with melted butter and the water with milk.
Stir with a spatula until the wet and dry ingredients are completely combined together.
Knead the dough with your hands, in a bowl or on the table. Don't insist much, the dough is soft and slightly oily, it's enough just to even out.
Flatten with your hands.
And roll out into a 6-7mm thick sheet.
If the edges are fringed, flatten with your hands. In the video, you can see even better how I do it.
Cut out various shapes: flowers, hearts, circles etc.
Or cut into squares, rectangles etc. with a pizza cutter, a special cookie cutter or a knife.
Line an oven sheet with baking paper and arrange the cookies in it.
I had two large cookie sheets.
Place in the preheated oven at 200 degrees C for 15-20 minutes.
Don't let the biscuits brown too much on top, if you keep them too long, they could burn and get hard.
Notice the cookies are done when they are browned on the edges and on the back.
Allow to cool completely for a perfect crispiness.
Delicious, simple, cheap and economical. I would say these biscuits are for any taste and adaptable to any preference.
