If you are bored with the classic salad recipes with greens, I suggest a delicious version of lettuce with apples and nuts. It's a combination I tested with the whole team at the last Live Cooking session and it was very successful. I knew that such a salad recipe would be good, but to be honest, it was the first I tasted it and I was very impressed. The ingredients are so simple, yet the salad is eye-catching and not at all ordinary. And, of course, it's colorful, beautiful and filling.
If you want to make a Lenten salad, replace the mozzarella with tofu cheese and you'll definitely enjoy it the same as the original version.
Wash the lettuce and dry well.
Break into pieces into a larger bowl.
Cut the apple into thin slices and add to the salad bowl.
Add the mozzarella cheese - you can leave the balls or you can crush them a little, it will make the salad more interesting.
Now put the walnuts, chopped with a knife or blender.
Let me give you a tip - the salad will be more flavorful if you toast the walnuts for 2-3 minutes on a dry pan - let cool, then cut.
Don't forget about the raisins or cranberries.
We prepare the dressing:
- In a small bowl or jar with a lid, combine the oil with vinegar and salt.
- Optionally, you can add some French mustard, it's not mandatory.
- Mix all the ingredients well using a fork. If you are using a jar, close the lid tightly and shake well until the sauce becomes like an emulsion.
Pour over the salad ingredients.
Toss well with 2 forks, to help the flavours blend.
Add more salt if needed.
Serve immediately and savour with great pleasure.
