I've been long planning to try a recipe for jam rolls with a simple sponge cake batter and no other things added. I say I made an exemplary roll - fluffy, soft and tasty. From here, you can improvise if you add various flavours to the recipe. It's up to everyone's imagination, but I promise I will come with some suggestions.
I used a new silicone mat with raised edges. It is brilliant, it was love at first sight! Silicone mats can be found anywhere, but this one with raised edges, for liquid batter, is not very common. I recommend it with great confidence, especially for rolls!
In a deep bowl, combine eggs and sugar.
Beat well until the mixture becomes a white foam.
Add flour and baking powder, mix well.
Don't forget to add some flavor - vanilla, almonds, rum, cocoa - whatever you prefer.
Line the large oven sheet with baking paper.
Using a raised edge silicone baking mat would be much easier.
Pour the batter into the tray and spread evenly with a spatula or spoon.
Place in the preheated oven at 200 degrees C for about 10 minutes. It's done really quickly, so don't forget about it!
While it's hot, roll it up, using a towel. Let cool completely.
After that, carefully remove the silicone mat or the baking paper.
Place 3-4 generous tablespoons of jam on top and spread evenly over the entire surface.
Then roll again as tightly as possible. Set aside for 1-2 hours.
Or cut and serve immediately. Optionally, garnish with icing sugar.
It's soft and fluffy. It can be filled with anything you like, not only with jam. If you want it softer, you can use syrup or fill with a more liquid jam.
