I wanted a simple, really simple, apricot cake, so I said I wouldn't invent anything new and extraordinary. I took the recipe for Cherry Sheet Cake, I added cocoa, I replaced the cherries with apricots and came out this wonderful, simple and seasonal traybake. Of course, you can replace apricots with peaches or other fruits, it's very good any way you make it.
Remove the pits and cut the apricots into small pieces - quarters or halves.
In a bowl, combine eggs with milk, oil, sugar and vanilla.
Mix in flour, baking powder and cocoa.
Stir well until lump free.
Pour the batter into a large baking tray, lined with parchment.
Smooth out into an even layer.
Arrange the apricot pieces on top.
Bake the cake in the preheated oven at 200 C for 25-30 minutes.
Allow to cool completely before serving.
Portion and enjoy - aromatic and sour apricots combine perfectly with the chocolate cake.
