This Bellini Cocktail is a symbol of Venice and, if you happened to be there but you didn't taste it, I dare say that you lost part of the charm of this city. I saw it in almost all souvenir shops and most of the time, it's artificial and commercial. The original Bellini is so simple. With a beautiful color and a slightly velvety taste, it has nothing in common with the fizzy drinks sold under the name of "Bellini". You can easily prepare it at home. I even recommend that you spoil your "other half" or your guests with a glass of this very fine drink.
In the season, use fresh peaches and in winter you can make it with peach juice.
Take some well-ripened, sweet, fragrant peaches.
Peel the skins off and remove the pit.
Place in a blender and pulse until you have a very fine puree.
Fill about half a glass with peach puree.
Add the same amount of cold Prosecco in 2-3 batches. Stir well with a teaspoon each time.
It should be poured little by little, to prevent from bubbling over when poured all at once.
Serve immediately, while it's still foamy on top.
Pour another drizzle of Prosecco just before serving in case there's no foam anymore.
