Healthy Beet, Carrot and Cabbage Salad
A very healthy and tasty cabbage and raw vegetable salad which was unexpectedly good, at least for me. This salad was recommended to me by the nutritionist as a dinner option in a weight loss diet, so you'll realize it didn't sound too good in the first place. It turned out to be a very pleasant surprise, it became my favourite and my children's too. Now, in the season of cabbage, carrots and new beets it's particularly tender and sweet.
Besides cabbage, carrots and beets - yes, yes, all raw! - I added a little celery root, cucumber, red pepper and onion. I can tell you for sure that you will have not only health benefits, but also experience a great gourmet pleasure.
Ingredients

Step by step
Step 1
Peel, wash and prepare all the vegetables.
Step 2
Cut the cabbage into thin slices and place in a large, deep bowl.
Step 3
Also cut the cucumbers, peppers and onions. Add to the cabbage.
Step 4
Grate the carrot on a medium grater.
Step 5
The same with the beets and the celery: grate and add to the bowl.
Step 6
Season with vinegar, salt and oil. Toss the salad well.
Step 7
It can be served immediately, in 1-2 hours or even the next day. We had some leftovers which we finished the day after and it was just as good.
