Today I come up with this simple recipe for people who want to eat healthy, tasty, filling and cheap food during Lent or those who are vegetarians. If you like braised cabbage, you will definitely appreciate this version with beans, they go very well together.
If you want it quick as well, you can use canned beans. Any kind of beans you like will do.
Drain well the boiled beans.
In a frying pan, heat the oil well and cook the julienned onions for a bit.
When the onions start to brown, add the tomato paste.
Mix well and cook for another 5 minutes.
Then add in the chopped cabbage.
Stir the cabbage with the onions and the tomato paste in the pan.
Turn the heat to medium, cover the pan / Dutch oven with a lid and cook for 10 minutes.
After this time, the cabbage will have softened. Mix well.
Add the beans to the cabbage.
Mix well. Cover with the lid and cook together for another 15 minutes, over medium-low heat. Stir 1-2 more times during this while.
If you think it's too dry, you can add half a cup of water. I don't usually do this because, under the lid, the cabbage releases enough juice, but it depends on its quality too.
Then add paprika, salt, pepper and other spices, as desired. Mix well, cook for another 5 minutes and turn off the heat.
Must be served hot.
