Once, I was craving for a simple plum cake and I found this recipe. It's homemade, soft, fluffy and most importantly, fast. I mixed everything together quickly, I put the plums on top, and baked in the oven.
I recommend this recipe. You can replace the plums with any other fruits and the batter is simple and fast, with ingredients which can be found in any kitchen.
Beat the eggs whole with sugar and vanilla until foamy.
Then add the milk ...
... and oil.
Mix thoroughly.
Finally, add the flour and baking powder.
Stir well until there are no lumps. The batter should be somewhat thick, but it should fall from the spoon.
Line a large oven sheet with baking paper. (I used the oven sheet from my 4 burner cooker).
Pour the batter and smooth out. Scatter the plum halves, skin side down, over the batter.
Sprinkle with a little sugar and cinnamon powder over each plum.
Bake the cake in the preheated oven at 180-200 degrees C for 35-40 minutes, until nicely browned.
Allow to cool.
Then cut and serve. Optionally, you can dust with powdered sugar.
