As promised, here is another bean stew recipe. This one is a bit more "sinful", but it's so good that it's worth cooking at least once or twice a year.
For this very tasty bean stew, it's important to choose some good sausages and, if you also add smoked pork breast or bacon, it will be even better.
Let the beans soak in water overnight, so they will boil better and faster.
Then boil for two or three hours with some bay leaves, a little oil, an onion and water - two or three times more than the beans.
Heat well some oil in a frying pan.
Add sausages - cut into pieces of about 2-3cm, bacon and onions - medium chopped. Stir periodically until they brown lightly.
Add the diced tomatoes, mix and cook for about five minutes.
Add the tomato / pepper paste, for a more intense taste and color. Mix well, let simmer for another five minutes.
This is what it looks like.
Now add the boiled beans, mix well and cook for ten minutes.
Pour in sour cream, stir again and simmer for ten minutes.
Season with salt and pepper. I also added tarragon.
Turn off the heat, allow it to infuse for a few minutes.
Serve with pickles and savour ...
