Lately I've been looking for a spinach pie recipe, both good looking and also quick to make from ingredients at hand. I did not hesitate at all when I came across this recipe. I got it right from the second try. I tested it on a larger sample of people. It was very appreciated and people asked for the recipe, so it must be good ...
Try not to replace the salted cheese (old, well drained) with softer cheese. It will still be tasty, but it seems that old cheese feels better in combination with spinach.
In a bowl, combine the milk with the eggs and the oil.
Add flour, salt and baking powder - mix well with a whisk until there are no lumps.
You should get a cream like thick batter.
Chop, but not too finely, the scalded and drained spinach.
See the recipe for Sauteed Garlic Spinach - steps 1-7 how I prepare the spinach.
Add it to the batter. Crush the cheese with a fork or with your fingers and add it to the batter.
Mix slowly with a spatula.
Pour the dough into a round pan (lined with baking paper). Mine was silicone, 28 cm in diameter, I didn't line it.
Bake the pie in the preheated oven at 200 degrees C for about 40-45 minutes, until it browns nicely. Check for doneness with a toothpick.
Serve hot or cold, cut into larger or smaller pieces, as you like it.
Enjoy!
