Tired of the same old grilled veggies? Try this refreshing sautéed carrots and zucchini medley that even picky eaters like my daughter Sofi, will enjoy. Feel free to mix and match with other vegetables such as baked mushrooms, pre-cooked broccoli, fresh peppers, pre-cooked green beans, or pre-cooked cauliflower.
Begin by slicing the zucchini into approximately 3-4 mm thick slices and grilling them.
Meanwhile, prep the other vegetables: peel and slice the onions, peel and grate the carrots, and finally, peel and thinly slice the garlic cloves.
Once the zucchini is grilled to perfection, set it aside on a plate.
In a deep pan, heat the oil and sauté the sliced onions.
As the onions near readiness, introduce the sliced garlic to the pan. Stir the mixture and let it sauté for a minute.
Next, add the grated carrot to the pan and sauté for approximately 5 minutes, stirring occasionally.
The mixture should still maintain some crunch, ensuring the carrot doesn't turn overly soft or mushy.
At this point, add the grilled zucchini slices, stir, and let the blend cook for an additional 2 minutes.
Season your vegetable medley with salt and, if desired, a bit of pepper, then remove from heat.
This versatile dish can be served hot as a main course or side, or chilled as a refreshing salad.
