During the cold season, finding simple and cost-effective ideas for side dishes or salads can be a challenge. This sauteed beets with tomatoes recipe is the perfect solution. The sweet taste of the beets, their silky texture, and the delightful aroma pair wonderfully with the other ingredients.
Although my husband and daughter were initially skeptical, they were pleasantly surprised by the taste. This dish has quickly become one of our favorite side dishes, right up there with sauteed carrots.
Peel, wash, and grate the raw beets using a larger grater.
Thinly slice the onion and sauté it in a little oil.
Once the onion is lightly browned, add the chopped garlic and cook for 1 minute.
Add the grated beets to the onion and garlic mixture, stirring well.
Cover the pan with a lid and cook over medium-low heat for 10 minutes, stirring 1-2 more times.
Remove the lid, add the chopped tomatoes or tomato paste, and cook without a lid on medium heat for another 7-10 minutes.
Season with salt to taste and turn off the heat.
Serve hot or cold, as this dish is both flavorful and slightly sweet.
