Start by cleaning the apples (leave the peel for extra flavor), and finely chop them using a food processor or grate them if you prefer.
Transfer the chopped apples to a pan, add 3 tablespoons of sugar, and sauté over medium heat for about 10-15 minutes.
Ensure the apples are softened and no longer have juice. Avoid overcooking them.
Allow to cool for about 10-15 minutes.
While the apples cool, prepare the dough manually or using a food processor.
Combine the softened butter, cream, eggs, salt, sugar, vanilla extract, flour, and baking powder.
Continue mixing until all ingredients are well combined to form a dough.
Transfer the dough onto a floured surface, even it out, and divide it into two parts.
Roll out the first portion of dough on the floured surface and transfer it to an ungreased oven tray.
Sprinkle two tablespoons of semolina flour over it.
Evenly distribute the apple filling over the dough, and sprinkle two more tablespoons of semolina over the apples.
Roll out the second portion of dough and carefully place it over the apples.
Prick the dough sporadically with a fork.
Bake for about 30-35 minutes in an oven preheated to 160 degrees Celsius. Avoid letting it brown too much.
Allow it to cool completely in the pan.
Portion the pie and if desired, garnish with a sprinkle of powdered sugar on top.
