Step 1
Pit the cherries and drain any excess juice.
Step 2
In a mixing bowl, combine the milk, oil, sugar, and eggs. Whisk thoroughly until smooth.
Step 3
Gradually add the flour and baking powder to the mixture. Stir well to avoid lumps.
Step 4
Grate the lemon zest and fold it into the batter.
Mix until the consistency resembles a thick cream.
Step 5
Line a baking tray with parchment paper and evenly pour the batter into the tray, spreading it out smoothly.
Step 6
Place the cherries (or your chosen fruit) on top of the batter.
Bake in a preheated oven at 180°C (356°F) for 30–40 minutes.
Step 7
When the cake is golden brown and passes the toothpick test, remove it from the oven.
Allow it to cool in the tray.
Step 8
Cut into portions, dust with powdered sugar, and serve.
