Step 1
In a bowl pour hot water, add sugar and yeast, mix well and leave for 15 minutes, until foamy.

After this time add 3 tablespoons of olive oil and salt, mix.

Put the flour and mix with a spoon or spatula.
Step 4
Remove the dough that forms on the table and knead it for about 5 minutes with your hands.

Put it in a bowl, cover with a towel and let it rest for 40-50 minutes.
Step 6
After this time, divide the dough into 2 equal pieces.
Step 7
Spread each piece of dough in a rectangular sheet and grease them with olive oil.
Step 8
Roll the sheet and gently grasp the edges.
Step 9
Put the rolls thus formed in an oven tray and with a knife make 2 cuts in the middle - as in the picture.
Step 10
Cover the loaves with a towel and let rise for 30-40 minutes at room temperature.
Step 11
Then bake for 30 minutes in a preheated oven at 180 degrees - until they make a nice crust and brown.
Remove them from the oven and let them cool completely.
Step 12
I did the first tasting when they were hot, I greased them with a little fresh olive oil and I sprinkled a little salt - delicious!
Very soft and cold, even the 2nd and 3rd day - one of the compliments was something like - "as if bought" so soft and tender it is. Sofia told me to make her more Spanish Bread, because it's good :)
