In a bowl measure the tomato juice, oil and sugar, mix well with a whisk.

Add flour and baking powder, stir so that they are not lumpy.

And finally put the flavors - vanilla and grated lemon peel if you have.

Spread a baking tray 26-28cm in diameter with baking paper.
Pour half of the dough and level it with a spoon.

And over the jam pour the other part of the dough.
I used a knife to carefully spread the dough over the jam layer - not to mix them too hard.

This is what the cake looks like before the oven.

Bake for 35-40 minutes at 180 degrees.
Allow to cool well after baking.

And serve, I powdered sugar, but it's not mandatory.
