Moldovan Sweet Rice Pudding - Plachia

Plachia is a cherished dessert from my childhood, often enjoyed alongside Baba Neagră during special occasions. Traditionally baked in clay pots in a wood-fired oven, this dessert carries the essence of homely comfort and rich flavors. After many attempts, I recreated its authentic taste last summer with the help of my aunt from the countryside.

Plachia is more than just rice pudding—it’s a velvety blend of rice, milk, and eggs, enriched with butter and vanilla for a deep, fragrant flavor. While the traditional recipe calls for an oven, it can be adapted for the stovetop with nearly identical results. This special version of rice pudding is worth trying for its nostalgic, heartwarming taste.

Ingredients

Short grain rice
1 cup
Milk
3 cups
Sugar
5 tbsp
adjust to taste for sweetness
Egg
3 pieces
Butter
50 g
Vanilla Extract
1 tbsp

Step by step

Step 1

In a thick-bottomed pot or saucepan, boil 1 glass of water (250ml).

Wash the rice thoroughly and add it to the boiling water.

Stir occasionally and let it simmer until the water is almost fully absorbed.

When the water is nearly absorbed, add the milk mixed with sugar. Increase the heat to bring it to a boil, then reduce to low heat, stirring occasionally until the rice is thoroughly cooked.

The mixture should achieve the consistency of classic rice pudding.

Remove the pan from the heat and mix in the butter.

Add the vanilla extract and, if desired, the raisins.

Stir well to combine.

In a separate bowl, beat the eggs until smooth and then pour them over the rice mixture. Stir thoroughly.

You now have two cooking options:

1. Cover the pan with a lid and let it simmer on the stove for 40-50 minutes.

2. Transfer the mixture to an oven-safe dish, cover with aluminum foil, and bake at 150°C (300°F) for 1 hour.

In either method, the pudding is ready when the rice is tender and the edges are slightly browned.
