Step 1
Mix the chia seeds with water, notice that they will absorb it and the composition thickens.
Step 2
Add lemon juice, finely chopped onion, oil and salt.
Step 3
Stir, add salt if needed.
Leave in the fridge for at least 30 minutes, for the flavors to penetrate well.
Step 4
I do it in the evening for the morning and it is perfect for the structure.
Serve with wholemeal bread.
