Spinach is an incredibly versatile and nutritious ingredient, and when paired with eggs, it becomes a delicious and satisfying meal. This recipe also includes a touch of heavy cream and the option to sprinkle cheese on top for extra richness.
It's perfect for breakfast, lunch, or a quick dinner. If fresh spinach isn't available, frozen spinach can work just as well with excellent results.
Wash the spinach thoroughly and cut the leaves into smaller pieces if they are too large.
Melt the butter in a pan and add the raw spinach. If it doesn't fit in the pan all at once, wait for it to wilt slightly and then add the rest.
Once the spinach has wilted completely, add the heavy cream and mix it in.
Let the mixture simmer for about 5 minutes. Add salt to taste.
Crack the eggs directly on top of the spinach mixture.
Cover the pan with a lid, reduce the heat to medium, and let the eggs cook.
Adjust the doneness of the eggs to your preference.
Turn off the heat as soon as the egg whites are fully set on top.
For softer yolks, avoid leaving them on the heat for too long.
