I have recently become a big fan of spinach and especially in combination with eggs. I also improvised with sour cream, it's not mandatory but it comes out very good, especially with a little cheese sprinkled on top.
A healthy version of breakfast, lunch or a quick dinner - I think you can also try frozen spinach.
Wash the spinach well and cut it a little if the leaves are large.
Melt the butter in a pan and put all the spinach so raw, if it doesn't fit immediately, wait for it to drop and add the rest.
After the spinach is well left, add the sour cream, mix.
Let it boil for about 5 minutes, season with salt.
Beat eggs on top of spinach.
Put the lid on the pan, make the heat more medium and let it cook.
We prefer soft eggs, but to be white on top, so go ahead as you prefer.
I stop the fire under the pan as soon as I see that they have turned white on top, if you leave them longer they will not be soft.
Serve immediately with a little cheese or yogurt next to it.
