Step 1
Peel a squash, grate it and slice it.
Step 2
Cut all the ingredients into cubes, including the onion.
Step 3
Add lemon juice, salt and pepper to taste.

Stir and let the flavors penetrate for 5-10 minutes,

For me, this is my favorite salad and garnish besides a grilled fish (usually for dinner), but it certainly goes with meat.
