Tochitura is a classic Romanian dish with rich flavors and rustic appeal. This hearty stew brings together a variety of meats and is perfect for a comforting meal. Traditionally served with polenta and cheese, Tochitura is versatile and allows for small adaptations based on personal taste.
While the smoked sausages are essential for their unique aroma, you can incorporate organic turkey sausages as a lighter alternative. The result is a flavorful dish perfect for any season.
Prepare and wash the meat.
Cut all types of meat into medium-sized cubes, ensuring you do not mix them together.
Heat a little oil in a deep pan.
Add the meats one at a time, starting with the one that takes the longest to cook.
Begin with the pork, sautéing until it starts to brown.
Add the chicken breast to the pan with the browned pork.
Cook together until the chicken begins to brown.
Add the chicken livers to the pan.
Let them cook for about 5 minutes, ensuring they harden slightly but do not brown.
Add the sausages to the pan, mix well, and cook for another 5-10 minutes over medium heat.
Add the roughly chopped onion to the pan.
Cook for an additional 5 minutes.
Pour in the tomato puree or diced tomatoes.
Turn the heat to high and bring to a boil.
Add the bay leaves, reduce the heat, and simmer for approximately 30 minutes.
After simmering, season with salt and pepper to taste.
Add the crushed garlic, stir well, and turn off the heat.
Serve the Tochitura with polenta (Romanian Mamaliga) and enjoy the rich, savory flavors.
Good appetite!
