A visually striking dessert that impresses with its unique striped pattern, Zebra Cake is a crowd-pleaser at any gathering. Its preparation is simple, using ingredients commonly found in the kitchen, and the mesmerizing stripes add a touch of fun and creativity. The option to glaze it with melted chocolate or keep it plain ensures flexibility to suit your preferences and occasion.
For decoration, you can opt for melted chocolate, as shown here, or keep it simple with a dusting of powdered sugar. Either way, this cake is sure to leave a lasting impression.
In a large bowl, combine the eggs and sugar.
Beat the mixture until it becomes a light and fluffy foam.
Gradually add the vegetable oil while mixing thoroughly to ensure it's well incorporated.
Stir in the buttermilk (or yogurt/kefir), blending until smooth.
Add the flour mixed with baking powder to the mixture, stirring until a smooth batter forms.
Divide the batter into two portions. In one portion, mix in the cocoa powder.
Optionally, you can enhance the flavors with vanilla, cinnamon, rum, almond, or other extracts.
Line a 28 cm diameter round baking tray with parchment paper.
Start by pouring one tablespoon of the cocoa batter into the center of the tray.
Next, pour a tablespoon of the plain batter on top of the cocoa batter, allowing it to spread slightly.
Repeat the process, alternating between the cocoa and plain batters, to create the striped pattern.
Continue until all the batter is used up.
Place the tray in a preheated oven at 200°C (392°F) and bake for 45 minutes.
Check the cake with a toothpick to see if it’s fully baked.
Once done, remove it from the oven and let it cool.
Carefully take the cake out of the tray and transfer it to a serving plate.
(Optional) For the icing, melt the chocolate and butter together over low heat or in the microwave. Stir until smooth and spread the glaze over the cake.
Allow the icing to cool and set slightly before serving.
Enjoy your Zebra Cake!
