From time to time I started to cook more and more various seafood, besides shrimp I rediscovered squid - properly cooked meat is not strong at all and the smell of sea is very discreet compared to other mollusks. I noticed that even large or adapted stores, now you can surely find squid or whole squid at any fresh or frozen fish section, and at very reasonable prices.
This holiday season we tested this squid salad and we really liked it - it's simple, filling, tasty and even unexpectedly good - as my husband said.
I had frozen squid, so I let them thaw a little.
I put a pan with water and a little salt to boil, when it starts to boil put the squid.
Let them boil for 2-3 minutes (no more!) From the moment the water boils again.
Remove immediately in cold water and leave them there until they cool well - so they will be soft and tasty, if you boil them too much they will become hard and elastic like gums.
Boil eggs in the meantime - here we have already prepared squid and salad eggs.
Cut the onion into juliennes and cook for 2 minutes with boiling water - not to be hot in the salad.
If you put green onions, they should not be scalded.
In a deep bowl put the corn, onion (drained well).
Cut the squid into thin, long slices.
Also cut eggs - longer slices.
Mix all ingredients with mayonnaise, season with salt and pepper.
It can be served immediately, it is even better if you keep it in the fridge for a while.
