Clean and wash fresh green beans, then boil them for 5-6 minutes or steam for about 10 minutes (this is my preferred method).
If using frozen beans, there's no need for prior preparation.
In a pan, heat 1 tablespoon of oil, add half a glass of water, and the julienned onion.
Cook until the onion is soft and tender.
Add the beans, whether boiled or frozen, in a timely manner.
Stir and cover with a lid. Let it simmer gently; for frozen beans, allow them to thaw and cook slightly.
Taste the beans to ensure they are cooked to your preference - whether more al dente or softer.
Add eggs and stir quickly, then let them simmer for 5 minutes.
Adjust the salt to taste, and consider adding ground pepper or a touch of crushed garlic.
Serve with pickles and a bit of yogurt sauce on the side.
