I kept avoiding cooking grilled fish, every time I had half a fish stuck to the pan or on the grill and the taste wasn't so great either.
For some time now we have been addicted to dorada fish, mostly cooked in the oven, plain or with vegetables - but I wanted a change. As I saw the baking paper method on the internet, I tried it the same day and I was very impressed - my husband said that this is the only way to eat dorada. It comes out very good, because it is not a dry fish, it makes a tasty crust and the meat remains tender and soft, not drowning at all.
I tried to do the same for the trout, it was good but being a little drier it stuck to the paper, and it broke.
The fish is cleaned and washed well, dry it well with some paper napkins.
Sprinkle with a little oil and spread it lightly with your fingers or a brush.
You can sprinkle the salt now or after cooking it even when serving.
Heat the grill pan well, put a piece of baking paper in it and the fish on paper.
But beware, the pan really has to be very hot!
Let the fish sit still for about 7-10 minutes (try not to walk on it while it is done).
Then with a spatula turn carefully on the other side and leave for another 7-10 minutes.
Serve it with any garnish you like - here a fresh mango salad with cucumber - follow the recipe :)
