For those who might find the walnut flavor overpowering, introducing some grated cheese to the filling can help mellow it out. And for a lighter twist, feel free to swap out mayonnaise for yogurt, or even mix the two!
Slice the eggplants lengthwise. You can either grill them, fry in oil, or lightly coat with oil and bake in the oven using baking paper or a non-stick tray.
Process the walnuts in a food processor until finely ground.
In a mixing bowl, combine the ground walnuts, mayonnaise, crushed garlic, and grated cheese. Season with salt as required.
Spread a tablespoon of the walnut mixture onto each eggplant slice.
Roll each slice tightly.
Present the rolls aesthetically on a serving dish and garnish with fresh greens.
