Returning from a brief vacation, I'm excited to share this simple yet delightful salad recipe. It's one of my top choices for a light dinner, especially when I want to avoid complex cooking but still enjoy a dish rich in vegetables.
The combination of corn and olives wonderfully enhances the tomatoes, creating a highly successful and tasty blend, ideal as a light dinner or as a salad/side addition to any main course.
In a deep bowl or on a plate, chop the tomatoes into small pieces.
Add the well-drained canned corn.
Add the olives whole or sliced, and thin slices of onion.
Mix in the olive oil and salt to taste. Stir well.
You can also add some freshly ground black pepper or favorite herbs. I haven't added any now.
Serve immediately as a simple meal for dinner or any occasion.
