Cut the julienned onion and put it in a pan with 1 tablespoon of oil and half a glass of water.

After about 10 minutes the water in the mushrooms will evaporate and start to brown (even without oil).
When they have browned a little, add the soy sauce, stir and turn off the heat.

Put the mushrooms and onions in a blender, mash them well to the consistency you like.

Season with salt and pepper, be careful with the salt because the soy sauce is salty.
