Cherry Poppy Seed Cake
The highlight of this recipe is the poppy seeds, which pair excellently with various fruits like apple slices, apricots, plums, cherries, and berries.
This cake is incredibly aromatic, a "poppy delight" - fluffy, tender, and quick to prepare.
Note: The quantities listed are for a 28-30cm round tray. In the pictures, I've doubled the quantities and used a large rectangular tray.

Step by step
Step 1
Prepare the fruits and finely grind the poppy seeds using a coffee grinder or blender.
If you prefer, you can skip grinding, though the seeds will be noticeable when eaten.
Step 2
Whisk the egg whites with sugar, then add the sour cream and blend well.
Step 3
Gradually add the flour and baking powder, mixing until smooth and lump-free.

Next, incorporate the ground poppy seeds and mix thoroughly.
Step 5
Pour the batter into a baking paper-lined tray and spread it evenly across the surface.
Arrange the cherries or chosen fruits on top.
Step 6
Bake the cake in a preheated oven at 150-180°C for about 40 minutes, or until it has a nice golden-brown color.
Then, let it cool completely.
Step 7
Cut into desired portions and serve.
