This is arguably the most refined cheesecake you've ever tasted, though its texture is reminiscent of pudding. It's an exceptional recipe that's quick and straightforward, yet delivers a visually stunning dessert. It's so popular it vanishes from the plate in seconds.
Using starch is optional. Omitting it might result in a less firm pudding, but it won’t affect the flavor.
For your information, these ingredients are suitable for a 20-22 cm diameter tray. If you have a typical 26-28 cm cake tray, double the quantities.
Beat eggs thoroughly using a whisk or mixer.
Mix in the condensed milk thoroughly.
Add the cheese, and blend well using a mixer or food processor.
Incorporate the starch if available, ensuring no lumps are present.
For an ultra-fast version, add all the ingredients to the food processor at once and mix until smooth and creamy.
Pour the mixture into a 20cm diameter tray lined with baking paper. Optionally, use a cake tray.
Bake in a preheated oven at 200°C for 30-40 minutes.
Leave to bake until the top turns a lovely golden brown. The pudding will rise during baking but it will settle once cooled, this is normal.
Serve fully chilled.
When warm, it might break apart, but that’s okay, you can enjoy it by the spoonful.
Enjoy your meal!
