Sauteed Wax Beans with Garlic

Many people ask me for healthy recipes, perfect for those focused on fitness or maintaining a well-balanced diet. I often cook low-fat meals, but what seems obvious to me can be quite challenging for others, such as cooking with minimal oil. As a result, many people find lightly cooked vegetables to lack taste and aroma.

These beans, whether green or yellow, are my favorite side dish to pair with either baked fish or a slice of grilled/baked meat. I highly recommend this cooking method; it's healthy, delicious, and incredibly simple.

Ingredients

Wax beans
500 g
or green beans
Green onions
2 pieces
you can use white onions, though nutritionists suggest green ones for lighter dishes
Extravirgin olive oil
1 tbsp
or sunflower oil
Garlic cloves
2 pieces
   
Salt
0.5 tsp
to taste

Step by step

Step 1

Clean and wash the beans. You can either break them into smaller pieces or leave them whole.

You have two options for cooking:

- Steam them, as I did. This preserves all their vitamins and enhances their flavor.

- Boil them in water, a simpler and more traditional method.

In both cases, don't overcook them. About 15 minutes should be enough to keep them slightly al dente.

When the beans are nearly cooked, heat a deep pan thoroughly. Add half a glass of water, one tablespoon of oil, and sliced green onions. Cook until most of the water evaporates and the onions are tender.

Add the cooked beans to the pan with the sautéed onions, mix well, and cook for an additional 5 minutes.

Then, add the crushed garlic and salt, and mix thoroughly.

Immediately turn off the heat, cover the pan with a lid, and let the flavors meld for about 5 minutes.
